Fable Kebabs x The Kindness Echoes

Mouth-watering marinated Fable kebabs served with freshly made flatbread and pickled onions

This classic Middle Eastern dish is something everyone at the table can agree on. If you want an easy but impressive dish to end the day, this Fable Kebab recipe will be your new go-to. Served with a generous dollop of creamy hummus and fresh homemade flatbread, you’ve got yourself a fantastically tasty dinner.

Ingredients

Flatbread:

  • 1 ⅔ cups all purpose flour
  • 1 tsp salt
  • cups lukewarm water
  • 3 tbsp olive oil 

Fable marinade:

  • 250g Fable
  • ½ cup coconut yoghurt or vegan cream 
  • 1 tsp cumin
  • 1 tsp onion powder 
  • 1 tsp garlic powder
  • ½ tsp paprika 
  • 1 tbsp tomato paste 
  • 1 tbsp olive oil 

Pickled onions:

  • 1 red onion, sliced 
  • ¼ cup white vinegar 
  • ½ cup water 
  • ¼ cup apple cider vinegar 
  • 3 tsp maple syrup
  • 1 tsp red chilli flakes
  • Pinch salt

Additional ingredients:

  • Hummus
  • Lemons, sliced

Method

  1. For the flatbread, start by whisking dry ingredients into a bowl, making a well in the middle and filling with lukewarm water. Roughly stir dry mix and water together, then transfer this onto a floured surface. Knead dough together for 1-2 minutes. Place kneaded dough in a bowl and add 1 tablespoon of olive oil to the top, cover in plastic and let sit for a few hours or overnight in the fridge. Once done, remove dough onto a floured surface, cut into 5-6 pieces and roll out dough into flat pieces. Rest dough again for 10 minutes at room temperature. 
  2. Heat up the frying pan with a touch of oil. Fry off dough until golden on both sides (you can add garlic and plant-based butter)
  3. For pickled onions, place sliced red onions into a jar. In a small pot, heat up all the pickled onion ingredients and pour into the jar to cover onions and let sit for at least 30 minutes. 
  4. Place your Fable pieces onto skewer sticks keeping some space at the bottom to hold. Whisk marinade ingredients together and marinate the Fable skewers with a brush. Heat frying pan and heat up sliced lemons, then fry Fable skewers evenly on all sides. 
  5. To serve, spoon a generous amount of hummus on a plate, add grilled lemons, pickled onions, flatbread and top with Fable kebab.
